Tomorrow is Bosses Day and my co-workers and I are putting together a little something special for the managers in our office. For such an occasion, I needed to bake something new and different. After googling some recipes, I decided to bake Martha Stewart's recipe for Snickerdoodle Cupcakes.
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 teaspoons cinnamon
- 1/2 cup unsalted butter, room temperature
- 1 cup sugar
- 2 eggs, room temperature
- 1 teaspoon vanilla
- 3/4 cup milk, room temperature (I used nonfat)
Preheat oven to 350 degrees. Line regular cupcake trays with paper liners (approximately 20).
In a medium bowl, sift together flour, baking powder and cinnamon. Set aside.
In a large bowl, use a mixer on medium power to cream butter and sugar for about 2 minutes.
Add eggs one at a time and mix until combined. Add vanilla and mix until combined.
Add flour mixture to creamed butter and sugar in three additions. Between the first and second addition add half of the milk and mix until completely combined. Add the second half of the milk between the second and third additions of the flour mixture (i.e. add 1/3 flour mixture and blend; add 1/2 milk and blend; add 1/3 flour mixture and blend; add last half of milk and blend; add final 1/3 flour mixture and blend).Fill baking cups about 3/4 full and bake for about 15-20 minutes. Remove cupcakes from trays and place on a cooling rack. When cupcakes are completely cooled, frost the cupcakes.
Combine a little sugar with cinnamon and sprinkle over the top of the icing for the final touch.
Elle Bee was so kind to lend me her cupcake carrier. I borrowed it for a potluck next Monday, but ended up needing to use it for tomorrow. I am so impressed with the carrier that I have added one onto my Christmas list. Don't forget to tell you boss how much you appreciate them! It is easy to focus on our own stresses of the job and forget that they experience the stress too. Thank you CDTC managers for all that you do for our department!

That cupcake carrier is an amazing invention! I hope Santa brings you one so I can borrow it! Hmmm...perhaps Mama Claus should see that it comes to pass! I have the privilege of recieving one of those cupcakes that is sitting on my counter waiting for "tea time" which according to my clock is any minute!!! The anticipation is overwhelming!

ReplyDeleteI used a frosting back and have a swirly tip. I have 3 different tips for frosting so let me know if you ever want to borrow one.
